Chef Phil Hickman has recently returned from Bangkok, Thailand where he was Chef de Cuisine at Le Normandie by Alain Roux within the world renowned Mandarin Oriental, Bangkok which was awarded 2 Michelin Stars in 2022 and 2023.
I have cooked for several prominent royal families, heads of states, celebrities and rockstars to name a few. As well as organisations such as Dior, Patek Philippe, Glenfiddich, the Irish Guards Benevolent Fund Dinner, Chef Charity Dinners, Michelin Guide Star Revelation Gala Dinner and assisting with the Cérémonie des Trophées de la Gastronomie au Palais de la Bourse de Lyon.
Starting his career in rural North Wales, he has garnered over 20 years experience, 12 years of which were spent under the mentorship of Michel Roux Snr OBE and Alain Roux.
He has spent time at some of the most prestigious restaurants in the world including 3 Michelin Starred NOMA in Copenhagen, 3 Michelin Starred Maaemo in Oslo and 2 Michelin Starred Restaurant Fäviken which was located on the Fäviken Egendom shooting estate in Jämtland, Sweden.
Michelin Star Experience
Chef Phil spent over 12 years of his career working with the Roux family under the mentorship of Chef Alain Roux and the late Michel Roux Snr OBE.
The Waterside Inn has held 3 Michelin Stars since 1984, a feat unrivalled outside of France.
Chef Phil joined the Waterside’s team in 2012, working his way up through the ranks to Sous Chef and Head Pastry Chef.
In 2018 he was offered the position of Executive Head Chef for the newly opened Brasserie Prince by Alain Roux in The Balmoral Hotel, Princes Street in Edinburgh.
2021 brought new opportunities for Chef Phil, the re-opening of the Le Normandie restaurant in Bangkok, Thailand as Chef de Cuisine under the new name of Le Normandie by Alain Roux. The Restaurant was awarded 2 Michelin Stars within it’s first year at the 2022 Michelin Guide Ceremony, and retaining this achievement in 2023.
This unparalleled time with the Roux family has given Chef Phil both the experience of being a 3 Michelin Star trained chef and experience running a 2 Michelin Starred kitchen as Chef de Cuisine.

My time spent working with Alain Roux and his late father Michel Roux Snr OBE is what has made me the chef I am today.
The skills and work ethic instilled in me from my first day in The Waterside Inn's kitchen is something I will keep with me forever.
The standard that is expected and required every single day has helped me hone my skills and I am extremely privileged to be able to say that I have mentored under them.
